Sausage and Beans with Rice


2/3 cup chopped onion
1/2 cup chopped green pepper
1 tsp minced garlic
1 tbsp olive oil
1lb. smoked sausage cut into 1/4" slices
16 oz. kidney beans rinsed and drained
15-1/2 oz. great northern beans rinsed and drained
1 cup instant brown rice
1 cup vegetable broth (I use chicken, but whatever)
1/4 cup packed brown sugar
1/4 cup ketchup
3 tbsp corn syrup
1 tbsp dijon mustard (I use honey mustard)

In a large skillet, saute onion, green pepper and garlic in oil until onion is crisp tender. Stir in the remaining ingredients. Pour into a greased 13x9 baking dish.

Cover and bake at 350 degrees for 15 minutes. Uncover and bake an additonal 10 - 15 minutes or until rice is tender.
This would also be easy to do in a crockpot.
