Cheesy Chicken Enchilada Casserole

This was a really good casserole. I used cream of potato soup which added a little heartiness to the dish. I also replaced the Velveeta cheese with Colby Jack shredded cheese. I didn't use an entire bag of chips and made this in an 8 x 8 dish.

4 bone-in chicken breasts
1 small onion, chopped
4 ounces chopped green chilies
10-1/2 ounce can cream of chicken soup
10-1/2 ounce soup can milk
Velveeta cheese
11-1/2 ounce bag tortilla chips
salsa or picante sauce

Boil chicken breasts, cool, debone, and coarsely chop.
Crush enough tortilla chips to cover bottom of a 9x13 pan. Layer chicken over the chips.

Mix together onion, green chilies, soup, and milk. Pour over the chicken. Place Velveeta slices all over the top. Crush enough tortilla chips to cover the cheese.

Bake at 350 degrees for 25 minutes. Garnish with salsa and sour cream.

Enchilada Casserole

Super easy and super yummy! The perfect meal to make when you don't want to heat up the house in the summer time.

1 lb. ground beef
1/4 cup chopped onions
8 oz. can tomato sauce
1/2 cup water
2 tsp chili powder (I also added 1/2 tsp garlic powder)
4 corn tortillas
1 cup shredded cheddar cheese
1/2 cup chopped tomatoes
1/4 cup sour cream

Microwave meat and onions in 2-qt microwaveable dish on high 4 to 6 minutes or until meat is done, stirring every 2 minutes; drain. Stir in tomato sauce, water and chili powder. Microwave 5 to 9 minutes or until slightly thickened, stirring every 4 minutes. Transfer to bowl.

Place 1 tortilla in same microwaveable dish; top with layers of 1/4 each meat sauce and cheese. Repeat layers 3 times. Microwave 2 to 5 minutes or until heated through. Let stand 5 minutes. Top with tomatoes and sour cream.

Hoosier Hard-Boiled Egg Casserole


This was a strange sounding recipe, so you know I had to try it. I liked it, but next time I'll make half the recipe. I also forgot the walnuts, but I think they would add to the flavor.
8 hard-boiled eggs, coarsely chopped
2 cups chopped celery
1/2 cup chopped walnuts
2 scallions, chopped (white plus green parts)
1/2 green pepper, diced
1 cup mayonnaise or Miracle Whip (light is OK)
salt (optional)
pepper
1 cup grated sharp cheddar cheese
1 ounce bag potato chips, crushed

Toss together the first 8 ingredients (eggs through salt and pepper). Top with grated cheese and sprinkle with crushed potato chips. Bake at 350F 30 minutes.

Sausage and Beans with Rice


2/3 cup chopped onion
1/2 cup chopped green pepper
1 tsp minced garlic
1 tbsp olive oil
1lb. smoked sausage cut into 1/4" slices
16 oz. kidney beans rinsed and drained
15-1/2 oz. great northern beans rinsed and drained
1 cup instant brown rice
1 cup vegetable broth (I use chicken, but whatever)
1/4 cup packed brown sugar
1/4 cup ketchup
3 tbsp corn syrup
1 tbsp dijon mustard (I use honey mustard)

In a large skillet, saute onion, green pepper and garlic in oil until onion is crisp tender. Stir in the remaining ingredients. Pour into a greased 13x9 baking dish.

Cover and bake at 350 degrees for 15 minutes. Uncover and bake an additonal 10 - 15 minutes or until rice is tender.
This would also be easy to do in a crockpot.

Pizza Casserole

I like this dish because it can be edited to meet individual tastes. I've cut this recipe in half from the original and changed the ingredients. Double what is here to fit a 4 qt casserole dish and add olives, mushrooms, etc. to meet your own taste.

3/4 lb. ground beef
2 green onions chopped
1/2 tsp salt
1/8 tsp italian seasoning
1/4 tsp pepper
1/2 tsp garlic salt
2-1/2 cups egg noodles
10 oz. jar pizza sauce
4 oz. tomato sauce
1/2 cup milk
1/2 cup sliced pepperoni
shredded mozzarella and cheddar cheese

Brown ground beef with onions and spices, drain.

Cook noodles as directed and drain.

Combine noodles and beef mixture with remaining ingredients except cheese. Turn into a 2 qt baking dish (I use my 8x8 pan). Sprinkle cheese over top.

Bake at 350 degrees covered for 30 minutes. Uncover and bake for an additional 10 minutes.

Tatertot Hotdish (Casserole)

Never the same twice. One of my favorite comfort foods. I apologize for there not being exact measurements, but with this dish you cook until it smells good.

1lb hamburger
chopped onion
pepper
1 can cream of (whatever) soup - I've used chicken, celery, mushroom and it's all been good.
frozen corn or other frozen vegetables
cooking spray
shredded cheese
steak seasoning
frozen tatertots

Preheat oven to 400 degrees (or whatever is recommended on tatertot package).

In large skillet, brown hamburger and onions with a few dashes of pepper, I don't use salt at this point because salt will be added with the steak seasoning at a later step.

Add creamed soup and frozen vegs. I use about 1 cup because I'm not a big fan of cooked veg's, so feel free to use more if you like. Heat thoroughly.

Spray 8x8 or 9x9 casserole dish lightly with cooking spray. Spread meat mixture evenly into pan.

Sprinkle with shredded cheese, I like a good layer for lots of cheesy goodness.

Spread tatertots over cheese to cover entire surface - 1 layer of tatertots only! Sprinkle tots lightly with steak seasoning.

Place in oven for about 25 minutes or until tatertots are golden brown.

I like to eat this with buttered bread and a big glass of milk. Feels like home again.
