Mmmm....potatoes....cheese...warm gooey goodness! I cut the recipe in half (except for the soup) and make it in an 8x8 pan. I also add ham or whatever leftover meat is in the fridge and make this a main dish.
1 can condensed cream of chicken soup
1/2 cup sour cream
32 oz pkg frozen southern-style hash brown potatoes thawed (this is good too with the onion and pepper mix)
1 cup shredded cheddar cheese (I use cojack)
2 cups Ritz toasted chips cheddar, crushed (I used cornflakes)
2 tbsp melted butter
paprika
Preheat oven to 350 degs. Combine soup and sour cream in large bowl. Add potatoes and cheese (meat if you're adding), mix well.
Spoon mixture into 13x9 baking dish and sprinkle with paprika (think "less is more"). Combine crushed chips (corn flakes) and butter; sprinkle evenly over potato mixture.
Bake 50 minutes or until heated through.
