Banana Muffins

2 cups baking mix (bisquick or store brand)
3/4 cup sugar
1 large egg, slightly beaten
1 cup mashed ripe banana (about 2)
2 tbsp skim milk
2 tbsp canola oil

Preheat oven to 400 degrees F.

In a medium bowl combine baking mix and sugar. Stir in egg, banana, milk and oil just until moistened. Spoon into a greased or paper lined muffin tin.

Bake 15-17 minutes or until golden brown.
