Pumpkin Cookies

The cookies came out very soft and the icing was quite firm, so the cookies crumbled as I was icing them. I'm going to play with this recipe a bit to see if I can make the cookies firmer and a thinner icing. Otherwise delicious!

1 cup shortening
1 cup canned pumpkin
1 cup sugar
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon

Icing:
3 tablespoons butter
4 teaspoons milk
1/2 cup brown sugar
1 cup powdered sugar
3/4 teaspoon vanilla

Make Icing first: Heat the butter, milk, and brown sugar together in a saucepan until smooth and melted. Let cool slightly and mix in the powdered sugar and vanilla. Set aside.

Cookies:. Cream together with a mixer the shortening, canned pumpkin, sugar, and the egg. Mix in the flour, baking soda, salt, and cinnamon till smooth.

Drop by spoonful on a greased cookie sheet. Bake in 375 degree oven for 10-12 minutes.

Spread the icing on the warm cookies.
