Peanut Butter Cup Cookies

My mom makes these for holidays. One of the million and one reasons why my mom rocks.

Miniature Peanut Butter cups

1/2 cup butter

1/2 cup peanut butter

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

1-1/2 cups flour

1 tsp baking soda

Preheat oven to 350 degrees.

Combine ingredients (except peanut butter cups) just as you would any cookie recipe - cream butters and sugars, add egg and vanilla, slowly mix in flour and soda. (If you really want to save time and work, you can buy refrigerated peanut butter cookie dough and follow the directions below.)

Roll cookie dough into 1 inch balls and place in mini muffin tin. Bake for 8-10 minutes. Remove from oven and quickly insert peanut butter cups. Allow to cool in pan (for faster cooling, place in freezer for a few minutes) and carefully remove from tin.
